According to the season Cretan cuisine comes up with a large variety of fruit and
vegetables (many of them are also known in our countries but also some
unknown wild vegetables, which one who knows about can find just outside his
doorstep). They are used to prepare tasty salads or cooked side dishes, which later will be flavoured with olive oil and lemon. Normally there are no huge portions served on separate plates, but a variety of small different dishes, which are placed in the middle of the table and everybody eats of them as much as he wants. According to the region there are different ways of cooking and specialities (various dishes of lamb and goat in the mountains), delicious fish dishes at the coast. Trying to find out how to prepare a lentil soup (fakies) we discovered five different ways of preparation, being similar but finally not identical. Everywhere you can find excellent Greek cookbooks, presenting the best-known dishes and their recipes (tsatsiki, moussaka, pastistio, dolmades (stuffed wine leaves) etc.) On the following website we select one of all the various and interesting plants (healthy ingredients) the St. John´s Bread.
